Summary

Updated documentation to clarify supported OpenSearch/Elasticsearch versions, added extended support details, fixed typos, and updated service links to HTTPS. Split support schedules into separate tables for Elasticsearch and OpenSearch.

Security assessment

The changes include explicit mentions of security updates being provided during extended support periods ('AWS provides critical security fixes for a period of at least 12 months after end of standard support').
